No Fuss Ice Cream Curious Creamery

the curious creamery, the boozey creamery, easy ice cream

A few years back we bought a great blender, the Blendtec. This machine can make everything from daiquiris to soup, smoothies to ice cream. I have to say though, the ice cream is not like what you would eat from an ice cream maker. Let’s face it though, ice cream makers are a big fuss. The ingredients, the time, and of course the cleanup. If only there were a no fuss way to make ice cream at home with the same great flavor and quality ingredients of homemade ice cream. Cupcake Taco Recipe

Crunching for time and on the look out for some tasty bites that I know my kids will enjoy, one of my bosses shared this recipe with me, of which I altered to enjoy in my home that, 1) Saves us money and 2) Saves us time. We love Mexican food and my kids love tacos, then add the love of sweets like cupcakes. Fuse the two and you have cupcake tacos. What is better than the love of cupcakes and the love of tacos to get CUPCAKE TACOS!

These tasty beauty bites are fun and great for the whole family. They require so little time and so little efforts. Made with wonton wrappers that you can find in the produce section or the refrigerated section. All you need is a cupcake pan and the following ingredients to make your cupcake tacos:

taco cupcakes, cupcakes, tacos, recipe

  • Ground Turkey (we use free range organic, but you can use ground chicken or beef)
  • 1 package of Won Ton wrappers or Egg Roll wrappers
  • 1 can refried beans (We used 365 Organic refried beans)
  • Chopped cabbage (or lettuce)
  • Diced tomatoes
  • 1 cup of shredded cheese (mexican mix or Colby Jack and Monterey)

Heat oven to 350 degrees. Brown the meat, add your favorite seasoning for spice and flair. We like chili powder, chipotle powder, cumin, onion powder, sea salt, fresh ground pepper and cilantro. Set the meat aside.

Take your Won Ton wrappers or eggroll wrappers and mold into cupcake dish. If using the Won Ton wrappers use two and alternate the layers. Layer in the meat and your refried beans until full then top with cheese.

Slide into the oven and bake until the wrappers are golden brown and appear crunchy. Serve warm topped with your favorite veggies.

Using the recipe calculator these yield about 200 calories per cupcake and pack quite the punch with 19 grams or protein. Taco cupcakes can be pre-made and stored in the fridge, make a large batch and stash in the freezer. They are a great addition and cost so little to make. For those picky eaters, they are also fun and taste great.

Fiber Rich Pasta and Tastes Great

How do you get your kids and family to eat more fiber in their diet? How do you get more fiber in their diet without all the nasty taste?

The answer is Barilla’s Piccolini Rich in Fiber Pasta.

Personally I love and adore whole grain, whole wheat, off colored pasta, but I am not alone in my household and let’s face it, I am outnumbered 4:1 when it comes to choosing what is for dinner.

NEW Piccolini Rich in Fiber – White.

It looks and tastes just like regular
pasta but with 3X more fiber!

Play hide and seek with fiber!
Piccolini created a whole range of white fiber pasta that looks and tastes just like regular pasta but with 3x more fiber.

Introducing Piccolini Rich in Fiber – White
• Contains 3x more fiber than regular pasta
• Provides 30% of daily whole grains (per 100g serving)
• Looks and tastes like regular pasta

Creating your favorite pasta meals without adding additional vegetables and or fiber additives is a great way to get your daily dose of fiber without the after taste or off taste that may be accompanied by whole grain, whole wheat types of pastas or the gripes and complains that come from picky eaters.

One of my favorite recipes is a chicken de Provence with pasta, fresh grilled chicken and summer vegetables tossed with a dash of olive oil and Parmesan cheese. Not only do my kids love to eat this dish, but little do they know it is loaded in great nutritional value.

So try Piccolini rich in fiber pasta for your next meal and share your tastes and recipes. Visit the Barilla site for more details and recipe ideas.

The Next Mini Chef

Are your children adventurous in the kitchen? Do they offer to help cook dinner and or other meals for the family? Are your kids interested in trying a variety of foods that are both healthy and tasty?

My mini chefs definitely favor homemade quesadillas with a variety of cheeses and meats. In fact two out of three love making and choosing what is for dinner they end up wearing it! We even began experimenting with different sauces, vegetables, and textures for different flavors. They especially like mom’s homemade salsa with fresh tomatoes.

As they have begun to experiment with various tastes and recipes they have expanded their taste for great healthy food that will foster healthy eating habits for a lifetime.

Allowing children to create their own recipe can benefit them even further than the brain power and healthy living power but they can yield even additional brain power with the chance to win a $10,000 scholarship.

Barilla and their line of fiber rich pasta Piccolini are offering the opportunity to enter to win a $10,000 scholarship. But time is running out! You only have three days left to submit your favorite mini chef recipe with photo to be eligible to win.

Sloppy Joes

The messy, saucy, warm, crumbly, meaty goodness in a warm, fluffy bun. The beloved Sloppy Joe.
Now I am a classy broad of sorts, I love my fish, my filet, my Faux Grois, something you use a knife and fork to eat, but I really love me my Sloppy Joe. This is a meal where I can really dig in and let loose. Last night, was a Sloppy Joe night. I don’t mean the open a can of Manwich type of Sloppy Joe night. I mean the real flavor, the taste, the ultimate mess of a homemade Sloppy Joe that guess what? You can make too! No can. No bullshit. Just open your pantry or your fridge to the loads of condiments in your door. Here are the deets for the easiest, tastiest, Sloppy Joe’s you will ever sink your teeth into…..ergo…..the rest will land in your lap….or like me….on my boobs.
1-2 pounds of ground beef or Turkey (if you are a dieting type person…like moi)
NOW, these ingredients all depend on the amount of meat AND how Sloppy you want that Joe.
1-2 cups of Ketchup
3T – 1/4 c of Yellow Mustard
1/2 – 1 cup of BBQ Sauce if you like that zippety sweet taste in your Joes
1/4 – 1/2 c of brown sugar
2-4T of Vinegar
1/4 c. Diced onions (optional)
1/4 c. Diced Bell pepper (optional)
BUNS (mmmmm…..buns)
  1.  Brown all meat with optional vegetable, while meat is browning mix together the vinegar and brown sugar to dissolve.
  2. Add sugar mixture to ketchup, mustard, and BBQ sauce, mixing throughly so that a smooth creamy consistency is reached.
  3. Drain meat of any fats and liquids and return to pan
  4. Add sauce, stir thoroughly until all meat is coated.
  5. Cook for 2 more minutes
Easy Peasy Pumpkin Pie. Sloppy Joes in a snap. Really who doesn’t love a Sloppy Joe?
My Big G…who doesn’t like anything that doesn’t rhyme or sound like chicken told me this:
“Mom, this is the bestest meal ever. It makes my stomach feel real good! Oh! SO! DELISH!”
I know buddy…..I rock as a lazy chef.
