Monk Fruit In the Raw

As a mom who is extremely health conscious of sugar intake in my kids diet I am always on the look out for healthy alternatives. Plant based sweeteners and naturally occurring sweeteners like honey, agave, and maple syrup are a go to with my recipes. I recently signed up to review Monk Fruit in the Raw sweetener as an alternative to sugar.

monk fruit in the raw, #intherawpartyI really had no expectations for the product. To be honest I am out of touch with a good portion of mainstream so I was okay going into this totally blind. More so were my guests who were also blind to the fact I was having a party featuring the product. We held a dinner party where Monk Fruit in the Raw was the guest of honor, showcased without a tremendous production, that’s how we roll.

My honest opinion was that it resembled Splenda. Light, fluffy, not very sugar like, with the exception of the white color of standard bleached sugar and I didn’t get that feeling that this was a solid sugar alternative. While the packaging indicates that it is a plant based, my opinion wasn’t that this was “all that” for plant based sweeteners. The ingredients are monk fruit extract and dextrose which is grape sugar.monk fruit in the raw, #intherawparty

Even though this is not a “Splenda” or sugar alternative like saccharin, the overall consistency reminded me of Splenda, saccharin, not anything I would probably use on a consistent basis. I am a texture person and if the texture looks processed and unnatural I just cannot get behind it.

The product overall was great and easy to use. Measuring spoon for spoon like sugar.

monk fruit in the raw, #intherawpartyMy guests were ever gracious and asked the same questions I did about the Monk Fruit and were willing to give it a go. The packaging was great and the men had a blast tossing it around like a football. The Monk Fruit in the Raw branded bags were also a hit for my party goers to take home with their sample, recipe cards and coupons.

Overall the party and product was a hit and definitely room for conversation with the fact this is a plant based product that resembles Splenda. I want to thank In The Raw for the great samples of Monk Fruit In the Raw to share with my party guests and family.

Hallmark eCards and National Christmas Card Day December 9

hallmark, hallmark ecardsI can hardly fathom that we are literally two weeks away from Christmas. My shopping is far from done and I am still scrambling for those “IT” gifts for my kids. Baking is still in dire neglect as I would love to share my goodies with my fabulous neighbors. Of course the cards. Christmas cards are my one time of year that I send out pictures of my kids to family members. Digression has set in though with my various projects, volunteer events, kids events, you know how it goes. So we have National Christmas Card Day to help remind us. The day of the year we should all send out our cards….or if you are short on time a Hallmark eCard.

Yes, we have a day just for Christmas cards. If you are like me and scrambling to send out those timely, stamped, handwritten treasures of old, you are in luck if you want to cheat a bit this year and send an e-card. While this may sound impersonal, I would much rather receive an e-card than a generic family picture with the token “Happy Holidays.” Call me quirky. Easy Chicken and Dumplings Recipe

I am normally a huge fan of desserts. Starting any meal with a dessert is truly living. But I live in a world where the reality is we cannot always have our cake and eat it too. So I substitute with some amazing comfort foods that warm my family’s belly’s as well as their hearts; The Chad loved to eat this favorite while growing up on air force bases. It’s a fairly inexpensive and goes the mile type of meal, sure to have plenty of leftovers, and let’s be honest….the leftovers are ALWAYS better the next day.

chicken dumplings4-6 chicken breasts, cooked, diced and or shredded

1 & 1/2 c of Kirkland Organic Mixed vegetables (potatoes, corn, green beans, carrots, celery), I like frozen, you can just toss them in and forget about it.

Organic Chicken broth (generally about 3-4 cups depending on how many people you are feeding)

Cream of Chicken soup is the shortcut way, I like to mix some heavy cream with my homemade Organic Chicken Broth.

Salt and pepper to flavor

1 bay leaf

For the Dumplings:
2 1/2 c Bisquick (I like to scratch bake my biscuits as opposed to using Bisquick, the choice is yours)
2/3 c. milk

In a large pot, dutch oven, crock pot, or Cuisinart Multi-Cooker like mine, simmer chicken, broth, vegetables, until vegetables are tender maybe an hour or more depending on how much flavor you want your vegetables to absorb. I personally slow cook my chicken overnight to have them fall apart and shred on their own into the pot.

Slowly add cream of chicken (or cream) and stir gently ever careful not to boil. Add bay leaf and let simmer for 20 minutes, skim out the leaf before the dumplings. While simmering mix the Bisquick and milk until a dough forms and slowly drop into soup mixture, cover and let cook for 10 minutes or until dough rises like bread and biscuits form. Remove from heat and ladle out into a bowl, serve with butter and pepper.

 

 

Swiss Miss Roll Recipe

Enjoy some of our favorite holiday recipes! Pumpkin is always a favorite for fall and winter dishes as the gourd is always in season during the cooler months. Here is our organic pumpkin pie recipe with a fresh Fairytale style pumpkin from our CSA. Another Holiday favorite is the Swiss roll. This delicious cake treat is remiss of the Little Betty Swiss Miss rolls with a creamy whipped filling, topped with a chocolate ganache coating. The cake may be a bit bitter as it is a Turkish chocolate delight, but still sweet and delish!

Pumpkin Pie

1 pumpkin
6 c. water for boiling

2 c. flour (for crust, obviously)
1/2 c. water (for crust)
1 c. shortening
Heat oven to 425*
1 3/4 c. mashed pumpkin
1 3/4 c. milk
2 large eggs
2/3 c. brown sugar
2 T. sugar
1 1/4 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves (be sure to ONLY use a 1/4 tsp or your pie will be very SPICY and the cloves will be overbearing)

Gut the pumpkin and all seeds. Cut into two inch cubes leaving skin on the meat during boiling. The boil time for an average size to a small pumpkin is roughly 25-35 minutes. Remove from water and allow to cool somewhat before removing skin to avoid burning. Once all skin is removed, mash or puree until desired consistency. Allow the mashed pumpkin to be completely cool before adding to pie mixture.

While pumpkin is cooling, mix flour, water, shortening together until dough forms. Roll out on a lightly floured surface to 1/8 inch thickness. Add to pie pan and flute edges. Fluting can be done with fingers, fork, or a spoon.

Mix together sugar and eggs until a creamed consistency, adding in mashed pumpkin. Mix thoroughly slowly adding milk, cinnamon, nutmeg, ginger and the cloves. By following these steps your pie will have a smooth consistency allowing all the ingredients to blend well together. Cook for 45-55 minutes using a toothpick to determine if the center is done. The pie will have a rich golden hue as will the crust.



Swiss Cake Roll

Preheat oven to 400*
2 eggs (separate yolks from whites)
3 T. flour
1/4 c. sugar
1 tsp. baking powder
1 T. warm water (I used day old warm coffee, adds a bitterness and a wonderful rich sweet taste)
1 oz cube of melted Bakers Semi-Sweet baking chocolate (or 2T melted chocolate chips)
Filling:
1 c. heavy whipping cream
1 tsp vanilla
1 T. confectioners sugar (or 1/4 c. sugar)
May add fresh fruit or flavor or your choice, almond, etc.

I also apologize for the poor picture quality….the cake was being eaten so fast to take when it was at it’s “prettiest.”

Beat together egg yolks and sugar until creamy, slowly adding the chocolate (be sure not too hot or will cook the eggs) and warm water. Then beat until foamy the egg whites, slowly adding in the flour, baking powder mix. Once the eggs and flour, baking powder are completely combined, slowly begin to add in the chocolate mixture. Once completely blended pour into waxed lined baking pan (13X9, buttered or greased then lined with wax paper or freezer paper for best results and lightly greased again). Bake for 12 minutes, remove immediately and place face down on freezer paper (or wax paper) dusted with powdered sugar. Place damp cloth on top to ease cooling time and allow cake to be easily rolled while warm, removing hard or rough edges, unroll after completely cooled and add cream filling.

Beat together sugar, vanilla, and heavy cream until a creamy, comes to a bit of a peak consistency. Do not over beat…filling will be ruined. Slowly spread along inside of cake, roll again and serve dusted with confectioners sugar or topped with drizzled chocolate or fresh fruit.

Mothers Be Good to Your Daughters

The dream of having a daughter was never donned in my world. Not that I am or was opposed to having a daughter. More or less, I struggled with the possibility of her repeating my life cycle. A strong willed baby girl, young woman, grown woman who would struggle in this world with her extroversion, can-do attitude, intellect and beauty. To me this was a recipe for disaster. So I ate words. I ate words about “never wanting children” and I ate my words with “only wanting boys.” My mother’s curse.

boys at airportYou know because boys are such much more fun. You know because boys you only have to worry about one penis and not an entire world of penises; penises that are vying for your willful, intellectual, beautiful daughter. Yes….this thought entered my head. What I believed about having a daughter was not at all what I thought or dreamed.

I initially thought there was some magic, maybe a feeling of mystique with having a baby girl. When I first laid eyes on her I knew she was beautiful in that ugly, alien newborn baby sort of way. She was a perfect baby. Very seldom cried, her twin acted on most of this for her. She was always smiling. She was always happy. For some reason this began to anger me. Her blissful happiness oozing from her, she was like a sickened Disney movie which erupted all about my house. Pink and purple despite all my best efforts to rid our world of these hideous stereotypical colors that would define her as anti-feminist.

Stewing in feeling of love and loathing for this little girl. I found myself snapping at her more as she grew older and more aware in her world. Barking to rise above. Snippy at an ounce of err for being youthful, childlike, a little girl.

How dare she!

This is a woman’s world. We have no room for games. Skipping. Dolls. We are about business. Wearing the pants and shouting f*ck you to any Tom, Dick and Harry for their neanderthal attempts to belittle the feminist. We are the sinew of every facet; the great influencer.

Sara getting nails doneUntil I realized how Grimhilde I was behaving towards my daughter. My behavior was deplorable and not one of a mother who birthed such a magical creature as a daughter. But why? Why do mothers behave so poorly to daughters? Or worse, glorify them to the point that they are so delusional to the reality of the world they become prima donna princesses with “entitlement” tattooed upon their brows. My daughter was undeserving of my behavior and I began to take a moral inventory, reflect upon my actions and behavior, what was the genesis?

The disturbing reality came down to origin. You see I was raised by my mother as my parents divorced when I was barely 10. By no means am I blaming my mother, much of what happens is based on environment. My mother was raised by her mother who was raised by a step-mother who lacked compassion and intimacy. So my mother was the recipient of a very business like mother, receipt of hugs was seldom, if never happened at all and thus history repeated herself with me. Time slowly changed with my mother and she became a bit more physically affectionate but it was awkward, even as an adult her affection is still a bit foreign to me.

Sara and KarieMy mother also was not a girly girl by nature. She was a Tom boy, who wanted to join the Peace Corp and save the world by burning one bra at a time. Yes, that was my James Taylor, John Denver listening mother. Makeup, curling irons, fashion, heels, this was not in her repertoire. Stitching, sewing both fabric, humans and caring for the ill was my mother. I love her so.

But as a vain, struggling to fit in, intellectual young girl and woman, wearing makeup and being hip on the latest fashion and trends from Tiger Beat were vital. Of which these suffered poorly. As I mentioned, my parents divorced as I was heading into my tween years, before they were even considered tween years. I had already spent a fifth of my life caring for my younger siblings due to my parents complete lack of familial interaction. Mom checked out emotionally with the divorce, struggling to earn a living to support three small children and Dad was off courting a familiar love and climbing his excelling corporate ladder chain. Somehow parenthood landed square on my eight year old shoulders. Dolls, skipping, earrings, makeup, fashion were all cast aside.

Many years I struggled with a lack of a true girlhood. Only realizing how much I struggled while raising my own daughter. The overall absence of a strong feminine figure in my life caused such a dramatic void that I began to resent my own daughter for the opportunities she was afforded. I saw myself very business like with my interaction with her. The awkward affection. I resented she had a mother and father, but never making this connection, never understanding my feelings of anger, jealousy, bitterness and envy.

How could I have been so blind? How could I have been so oblivious to how I was treating my baby girl? Fueled by my own anger and frustration for my own circumstances, I was blinded to how I was bequeathing the same future to her. This was my golden opportunity to transform the maternal paradigm. I prayed for Sara. I prayed for her to have a better mother who could let go of the anger of not having someone to instruct and depict makeup application, hair styles and trends, fashion statements (or lack thereof), to skip with to the front of the grocery store, to speak life and beauty without seeming insincere or pained at the task. To allow her to enjoy being a little girl playing with dolls, embracing her feminism with throat punches to the boys, showing her to cross her legs and sit properly all while wearing a skirt and picking out the best shoes. Loving her the way she deserved to be loved.

I grieved.

Karie and Sara SedonaThen I woke anew. Ready for the challenge to be the woman she needed; to help be her first role model of a woman. Guiding her in the struggles she would face as the foremost influence to mankind. When I say I grieved I truly grieved. A piece of me died one day. I said goodbye to my inner little girl who didn’t get to enjoy all that Sara has and will enjoy. I grieved the woman I once was; the anger, the bitterness, the sadness I carried because of the shame I felt for wanting to be that little girl and how I felt so wrong for wanting to be a little girl. I had to be strong, youth was seen as a weakness at a time when no one else was strong for me or my siblings.

Only realizing now, that as a parent, we think so much relies heavily upon the father figure, which to some degree carries a truth. However, I see now how impactful mothers being good to their daughters, and sons too, will shape who they are to become as adults. The love, support, and influence of a mother will either perpetuate the paradigm or result in a shift for our children and how they raise their children. I can only hope to be a better mother; to give my baby girl all she needs and wants in a woman role model and mother. May God continue to bless me with wisdom to bestow upon her and our legacy. Thankful I was able to realize how my parenting as a mother was only going to hurt us both. By grace I was changed to be better for her, be better for us.
